Cabernet Sauvignon: Origins and Characteristics of This Grape Variety
What is the most widely planted grape variety in the world since 2010, and the one behind many of the world's most expensive wines? The answer might be obvious from the title: Cabernet Sauvignon. How did this grape, which emerged relatively recently, become so essential? What are the aromas of Cabernet Sauvignon and what do they contribute to the wines it composes? Cabernet Sauvignon is a grape of many facets, expressed through various terroirs and blends with other grape varieties. It offers the wine world a structure, complexity, and richness that few other grapes can boast. Let's explore the success story that has carried this grape across France and the globe.
Description and Origins of This Grape Variety
Cabernet Sauvignon came into existence quite recently by a fortunate accident. It was created through a crossing of Sauvignon Blanc (a white grape variety) and Cabernet Franc (a red grape variety) in the 17th century in southwestern France, in Bordeaux. This fortunate crossing resulted in a grape with unique aromatic and taste qualities, as well as practical attributes for vineyard management.
The crossing produced small, thick-skinned grapes. This makes the growth and harvest of the grapes easier while protecting them from excessive rainfall or rot before harvest. Additionally, this newly created variety develops its buds late, helping it to better withstand spring frosts.
While this grape offers many advantages for viticulture, it is especially recognized worldwide for its flavors and its role in winemaking.
Its Aromatic Characteristics
Cabernet Sauvignon produces tannic, complex, and structured wines that develop with aging. It maintains a good balance of acidity and alcohol across the terroirs where it is cultivated. In the early years, when varietal aromas are expressed, it features notes of black fruits and berries. Blackcurrant, blackberry, violet, and even raspberry are often noted.
As it matures, the wine evolves to exhibit more musky and leathery aromas. It’s also worth mentioning that its high tannin content is often managed, especially in Médoc, through aging in new oak barrels. This process can introduce oak-related aromas (or tertiary aromas) due to the interaction with the wood.
The association of this grape with a green bell pepper aroma is also common. This aroma can indicate either a lack of ripeness when Cabernet Sauvignon is harvested too early or an issue with the vinification process due to excessive yields.
Major Terroirs Where It Is Cultivated in France
Originating from Aquitaine, this grape reaches its full potential in the terroir of Médoc, particularly in Pauillac or Graves. It thrives in warm, sandy-gravelly, or limestone soils. Illustrating its popularity, it is included in the blends of some of the most renowned wines: Margaux, Pauillac, Saint-Julien, Saint-Estèphe, Listrac-Médoc, and Moulis-en-Médoc. In Bordeaux, it is generally blended with Merlot.
Not far from there, it is also worked in the rest of southwestern France, where it contributes to the production of both red and rosé wines.
This grape has also been exported to other French vineyards, adapting to different climates. In western France, it is found in the Loire Valley, contributing to various appellations such as Chinon, Cabernet-d’Anjou, Saumur, and Anjou.
It is also expressed in the south, in Languedoc and Provence. There, it is blended with Syrah, adapting to the southern terroir and climate to express another facet of its personality.
It is this myriad of expressions that makes Cabernet Sauvignon a versatile companion to many dishes. When young, its tannins pair particularly well with meats. When more mature, it complements cheese and mushrooms beautifully, and even chocolate in some cases. But the best way to understand this grape is to experience it yourself!
