Which white wine should you drink with fish?
With fish, reach for a dry, fresh, mineral white wine: a Muscadet, a Chablis or a Sancerre for delicate flesh, a rounder Chardonnay for fish in a sauce, a Pinot Gris or a Champagne for oily fish. Serve it chilled (8-11 °C). The reflex to avoid: an oaky or overly sweet white on raw or smoked fish, which would crush its finesse.
When it comes to pairing wine with a dish, fish almost naturally calls for a white wine. The main rules for pairing white wine and fish
As a general rule, the more delicate a fish, the more delicate the wine should be. Conversely, an oily fish or one cooked with a rich sauce can stand up to a fuller, more structured white wine. An AOC Muscadet Sèvre et Maine, with its iodised character and lovely freshness, is an excellent choice. Likewise, an AOC Chablis or an AOC Sancerre blanc based on Sauvignon Blanc will subtly accompany a simply poached or steamed fish.
Pinot Blanc, an emblematic grape variety of Alsace, also lends itself very well to the exercise. If your fish comes with a sauce, especially a cream or beurre blanc sauce, you will need a wine with more roundness. A Burgundy Chardonnay (such as Meursault or Montagny) with light barrel ageing offers the necessary structure, along with notes of ripe white fruit and a touch of hazelnut.
For a lemony or herb sauce (such as dill), favour a lively Sauvignon Blanc like a Pouilly-Fumé, which wakes up the palate and cleanses it.
Oily fish: a white wine with character
Salmon, mackerel or tuna call for a white wine with body. A Pinot Gris from Alsace or a Viognier from Languedoc are perfect thanks to their roundness and their notes of yellow or exotic fruit. Champagne, with its finesse, wonderfully accompanies a salmon cooked en papillote or seared on one side.
