WHICH WINE TO CHOOSE FOR BLANQUETTE DE VEAU?
WHAT TO DRINK WITH A BLANQUETTE DE VEAU?
Tender veal pieces, pearl onions, button mushrooms, carrots, and a famous creamy sauce whose demanding whiteness, from which it derives its name, can intimidate the uninitiated.
Red or White Wine?
To accompany it, we tend to choose red wine. However, it's important to note that milk proteins don't pair well with the tannic structure of red wine. Our advice? Opt for a round and powerful white wine with a nice acidity that will enhance the creaminess of your blanquette, such as a Chablis or an Alsace Pinot Gris.
Our Suggestion: Chablis Domaine Vincent Wengier
This Chablis, with its golden-yellow hue, offers aromas of white flowers, citrus, and subtle smoky mineral notes. On the palate, it delivers refreshing acidity and delightful roundness.
Our Tip: Blanch the blanquette in slightly vinegared boiling water.
Enjoy your meal!
