Everything You Need to Know About Noble Rot in Wine
Noble rot is a term that might surprise wine enthusiasts, as the word "rot" has a rather negative connotation compared to its qualitative significance. However, this "rot," also known as Botrytis cinerea (or Botrytis among friends), is actually a blessing for certain wines. Indeed, noble rot imparts unmatched flavors and aromas to the sweet wine it graces! In this article, we invite you to discover what noble rot is, how it develops, and to take a look at the wines and appellations it produces.
What is Noble Rot?
Noble rot is a natural phenomenon caused by a fungus called Botrytis cinerea. This fungus develops on grapes when the weather conditions are favorable, especially in autumn, with alternating periods of humidity and sunshine. The presence of a river near the vineyards, such as the Ciron in the Sauternais region, is often the secret behind the development of noble rot.
Botrytis cinerea causes the grapes to dehydrate, concentrating their sugars and aromas. Wines produced from these grapes thus have more intense flavors and remarkable aromatic complexity.
How Does Noble Rot Develop?
Noble rot does not develop randomly; it requires very specific conditions to spread.
Here are the main stages of the development of noble rot:
- Humidity: The fungus needs humidity to develop. Morning mist or fog favors its spread.
- Sunlight: Once the fungus has developed, sunlight plays a crucial role in drying out the grapes and promoting the concentration of sugars.
- Quality of Grapes: Noble rot only develops on healthy, ripe grapes. Damaged or too young grapes are not conducive to the development of the fungus.
It is important to note that noble rot does not develop on all grape varieties. In France, certain varieties like Sémillon, Gewurztraminer, and Chenin are particularly suited to noble rot because they have thin skins and ripen late.
Harvesting Grapes Affected by Noble Rot
Harvesting grapes affected by noble rot is a delicate and laborious process. Harvesters must carefully select the clusters and berries affected by noble rot, avoiding those affected by gray rot, which, unlike its cousin, is absolutely not desirable!
This meticulous selection is often done in several passes through the vineyards, to harvest only the berries that show the right stage of noble rot. This method of harvesting (also called successive tries) combined with the small quantity of juice obtained during vinification largely explains the high price of wines made from noble rot. Iconic Noble Rot Wines in France
Noble rot is the origin of some of the most prestigious (and most expensive) wines in the world. Here are some examples of iconic wines and appellations in France made from noble rot-affected grapes:

AOC Sauternes and AOC Barsac: These sweet wines from Bordeaux, specifically the Sauternais region, are undoubtedly the most renowned botrytized wines in the world. Generally made from a blend of Sémillon, Sauvignon Blanc, and Muscadelle, AOC Sauternes wines are known for their intense aromas of candied fruit, spices, and honey. Among the most illustrious estates, Château d'Yquem is certainly the most famous domain of the Sauternes appellation.

Alsace Wines: The Alsace region is also conducive to the development of noble rot, particularly for the Riesling and Gewurztraminer varieties. While AOC Alsace "Late Harvest" wines are partly made with botrytized grapes, AOC Alsace "Selection of Noble Grains" wines are produced solely from noble rot-affected grapes and offer complex aromas of candied fruits, sweet spices, and a mineral sensation on the palate.

AOC Monbazillac and AOC Jurançon: Some appellations in the Southwest, such as AOC Monbazillac, AOC Jurançon, and AOC Gaillac, are also renowned for their sweet wines made from noble rot. These sweet wines with a very long history are made from various grape varieties like Sauvignon Blanc, Muscadelle, Sémillon, Gros Manseng, and Petit Manseng.

Loire Valley Wines: Among the regions producing exceptional sweet wines from noble rot, the Loire Valley stands out with appellations like AOC Coteaux du Layon, AOC Quarts de Chaume, and AOC Bonnezeaux. These wines showcasing the Chenin Blanc variety offer aromas of candied fruits, white flowers, and honey while maintaining a beautiful freshness and acidity.
